My Sad Goodbye To "The King Of Pop".

Like many other teenage girls in the 80's, I was a huge Michael Jackson junky. I put this picture up because this exact poster was my prize possession for many years. I use to look at it every night and blow Michael a kiss before I went to bed. I had every magazine, poster, album and even a buffet of M.J. pins that I wore enamoringly on my jean jacket. He was my idol, a superstar to all.

I was at the gym yesterday riding the exercise bike and I could not hear the TV, I just saw on the news them post up his date of birth and death date. I was shocked, I started going around the gym sharing my sorrow and everyone was stunned as well---since the news had just come out.

Sad day not only for me, but for all the Michael Jackson fans that grew up like me, wishing they could just get a chance to meet this amazing dancer, singer, performer.

Although the later years weren't so good for Michael, allegations of child abuse and the many plastic surgery mistakes. We will never know the true Michael Jackson but I will never forget the Michael I want to believe he was.

Goodbye my forever friend Michael, you will hold a special place in my heart always.

If Michael is in heaven, I'm sure he's moon walking on the clouds... ;)

Thanks for the memories! Farewell!

*Sending out a special prayer to the families of Michael Jackson, Farrah Fawcett and Ed McMann, whom had also passed away this week and will be missed dearly.

white tea.

Black tea has been fully fermented during processing, and green has not been fermented at all.

So what is white tea? White tea is similar to green tea, in that it's undergone very little processing and no fermentation. However, there is a noticeable difference in taste. Most green teas have a distinctive 'grassy' taste to them, but not white tea. The flavor is described as mild, light, and sweet.

There is also considerably less caffeine in white tea than other varieties (15mg per serving, compared to 40mg for black tea, and 20mg for green). Some studies have shown that white tea contains more active cancer-fighting antioxidants than green tea.

There are many varieties of white tea, with poetic names such as: golden moon, white peony, silver needle and white cloud. White teas are produced mostly in China and Japan, but the Darjeeling region of India also produces some fine white teas.

Pour, Steep and Enjoy! :)

What's For Dinner Tonight?

Looking for a tasty, healthy dinner recipe? Try a "Salsa Chicken Dinner". If you love Mexican food but don't want to consume a ton of calories, try this recipe from womenshealthmag.com.

Tip: You can serve the chicken with a side of frozen vegetables or rice and corn tortilla chips and you have a delicious meal in 10 minutes or less.

Salsa Chicken Recipe:

4 frozen chicken breast halves (6 ounces each), thawed, skinned, and boned

½ cup frozen defatted chicken stock, thawed

1 cup of frozen minced onions

1 cup frozen sliced carrots

1 large tomato, chopped

1 teaspoon minced garlic

¼ cup salsa

¼ teaspoon ground black pepper

¼ cup grated Parmesan cheese

Directions:

1.
Place each chicken breast between 2 sheets of wax paper. With a meat mallet or the side of a cleaver, pound to 1/4" thickness.
2.
Coat a 10" no-stick skillet with no-stick spray and place over medium-high heat until hot. Add the chicken. Cook for 2 minutes. Turn the pieces. Add the stock and bring to a boil.
3.
Add the onions, carrots, tomatoes, garlic, salsa, and pepper. Cover and cook for 3 minutes, or until the chicken is no longer pink in the center. Check by inserting the tip of a sharp knife into 1 piece. Sprinkle with the Parmesan. Cover and cook for 1 minute, or until the Parmesan starts to melt.

*Only 255.9 calories and 42.9 grams of protein. Sounds like a perfect dinner choice to me!

Invite some friends over and open a nice vino! :)

When Should I Stretch?

I was watching a TV show on ESPN last week and they were interviewing a professional runner. The interviewer asked him if he stretches before he starts running and to my surprise he said no. He told her that we should never stretch cold muscles. He stated that we should either walk or jog first to warm up the muscles, then we can stretch, and after that start running or begin our workout routine. What he said made so much sense to me since it would be very easy to pull or tear the muscles if they are not warmed up first.
.
Here are some smart stretching tips I found from essortment.com.

- Do not bounce – bouncing could also result in a torn or pulled muscle. Instead, hold each stretch for 30 – 40 seconds. In doing this, you may note that the muscle begins to relax and you can go further into the stretch. It is important, however, not "over-stretch" to the point where you feel muscle resistance or pain.

- If you feel discomfort or pain, stop. – If you stretch to the point of feeling pain, you could be hurting your muscle and be causing an injury that will keep you from running.

- Do stretch slowly – Move into all stretches in a slow and controlled manner. If you stretch too quickly, the muscle will contract and you will find yourself to be unable to relax the muscle and increase flexibility.

- Do stretch, but do not stretch too much – Remember to stretch, but do not forget that your reason for stretching is to get on the road or trail for your run! Runners need to stretch, but do not let this part of your workout become your entire workout.

Stretching is important, but proper technique is key!

Jump Around, Jump Around!

Jump roping is a fun, muscle strengthening, heart pumping cardiovascular exercise. If done properly it is actually relatively easy on the knees. With a little practice you will gain momentum and coordination. It also costs very little or nothing at all if you pretend you are using a jump rope and just do the arm movement and jump high enough like you would naturally with an actual jump rope.

Go your own pace and start slowly. You will build stamina before you know it.

Jump, jump, jump! Now you got it!

Why Is Fiber Important?

Fiber is a very important part of our daily diet. On average, most people only eat about 12g of fiber daily, we should be aiming to consume between 20-30g a day. Fiber is only found in foods that come from plants. You won't find any fiber in other types of food such as meat, fish or dairy products.

Good sources of fiber include:
  • fruit,
  • vegetables,
  • seeds,
  • nuts,
  • lentils,
  • beans,
  • oats,
  • whole grain rice, pasta and bread,
  • whole grain breakfast cereals.
Benefits of a high fiber diet: fiber keeps you fuller longer, helps other foods to move through your digestive system more easily, may help to reduce the amount of cholesterol in your blood.

*Tip: It is important to increase it gradually. A sudden increase can make you produce more gas, leave you feeling bloated and cause stomach cramps. Also, drink plenty of water, between 6-8 glasses a day.

Pay It Forward

I was in traffic this morning and I was trying to get over into another lane. There was this woman who certainly had plenty of room to let me in. Instead, she sped up and decided to race me and not let me in. I got so frustrated and angry inside thinking why do people act like that. What did she have to gain by not letting me in? I then took a deep breath and let it go, because I know that the traffic and she certainly didn't care that I was angry, so why bother feeling that way?! I have made a vow right now to let other people in on the highway and not make someone else feel the way I did this morning.

How about we all "Pay It Forward" today and hopefully it will start a chain reaction and everyone will do something nice for someone else and faithfully keep it up everyday. Wouldn't this world be a nicer, happier, kinder place?

Let's exude love not hate!
